明治になって西洋文化と共に牛肉を食べるようになったときにそれをどう調和させていったかが、味噌味の「牛鍋」を通じて見事に描かれている

One of the first recipes to soften the general resistance to meat-eating, was beef cooked in a savory hotpot. It was seasoned with miso, which has been a key part of Japanese cuisine for centuries. Blending this well- loved ingredient with the unfamiliar taste and texture of beef help people to become accustomed to the idea of eating meat. This early example of the successful marriage of western ingredients with Japanese traditional cuisine set in motion a creative movement that helped to diversify the Japanese diet. It eventually led to a development of the distinctive and highly popular category, Youshoku.
